Shochu is a “living thing”, which includes ingredients such as sweet potatoes, koji and yeast. We are always looking for the slightest change in weather or temperature and when we feel that the Shochu we are doing is the best we can do, that’s when we do. When people drink Shochu and say “it’s delicious”, it is especially in these moments that Komaki feels the greatest joy in doing Shochu. He is able to endure the daily hardships of making Shochu because he believes his pleasure is that the consumer and his own in drinking Shochu.
