Production areas and denomination of origin
Satsuma, which is the ancient name of Kagoshima, has obtained a geographical indication, which is the equivalent of the Italian doc or the French aoc for wines. This denomination can be attributed to certain sweet potatoes Honkaku Shochu.
Iki island obtained a denomination that can be attributed to barley Honkaku Shochu. Kuma, in the Kumamoto prefecture is attributed to some rice Shochu.
Ryukyu, Okinawa’s ancient name, designates the origin of spirits made on the island from Thai rice, which is long grain of indica variety. Only black koji can be used for this type of spirits.
It should be noticed that, among other prerequisites, every denomination of origin requires the use of local spring waters.
